The King R&B Box Set is a good place to start. Most of the big names were signed to King at some point.

If you want to get in to more bubble-gummy R&B, the early stuff from Atlantic Records is decent. Notably Ruth Brown.

There's some pretty good New Orleans R&B around also. Smiley Lewis, Dave Bartolomew, Fats Domino (of course), Lloyd Price, etc. There are some great cameo appearances in the final episode of season 1 of Treme.

The British Ace label is another good one to check out for RnB, for example this CD ... Juke Box R&B
