I'm surprised that there are only 13 tunes on this thing. I would think that for a lindy hop compilation it might be a two cd affair. Of course, I realize that compilations are difficult to assemble but I'm hoping for more future collaborations of this type.

An iMac heh? I'm jealous. Unfortunately I think that the best is LAME then followed by iTunes. So until EAC comes out for the Mac I think that is what you have.

Those are great categories to start with. How about two more:

50's swing bands (not rock and roll)
Bebop (late 40's stuff perhaps)

Keep the explanations short. Announce the categories and have the djs go at it. The dancers and judges should be the final arbiters.

There is none. Unless the person request something the band has played. Then that is a no-no. I generally don't take requests during band breaks. It just simplifies things.
