Yes I find that too - I usually have a better sense of the mood and the conditions, and therefore have a better idea about what I can get away with. Conversely, if for some reason you miss part of the earlier set(s) altogether it can be more difficult to find the groove, and there's the added risk ...

Perhaps its because I learned about the song through the story, but "Strange Fruit" is... not so subtle. Poetic, yes; subtle, no. a couple questions: do you think the dancers are listening to the lyrics of the stuff you play, or dancing to the emotional tone, and in general how important is that? I often succumb to the Late Lindy Hopper Syndrome myself, but I also still don't mind doing opening sets. It gives you the opportunity to set the tone for the night and perhaps try out the songs you're unsure of. Getting the energy level up for the newbies can only benefit the more advanced dancers ...

Interesting question. I would say somewhere between 5 and 10 hours a week. I know what you feel though about knowing your collection. I have a very small collection, but it never feels like I have a handle on it.
