I agree that planned jams (other than birthday jams & such) aren't really in the proper spirit. I will occasionally try to ignite one when I'm DJing, though, by playing an appropriate song, clapping, getting on the floor myself, etc.
I find that playing a good jammable tune after folks do a Big Apple often works. There's already a lot of energy in the room and folks are already more or less in a circle and clapping... (It works better if it's a moderately tempoed Big Apple, though, rather than say one to Gate's version of "Flying Home", which tends to wear folks out.)
"Lavender Coffin" works sometimes, followed up by a faster song. Jimmie Lunceford's "Stomp It Off". Lots of Cab Calloway tunes, though "Chant of the Jungle" just seems to scare folks off.
